Goat Cheese and Thyme Crescent Rolls

So, my appetizer post is late, but here it is. We were at a cottage in the Georgian Bay for a week and thoroughly enjoyed our time away. Being on an island (a 20min boat ride and 30min drive from the nearest grocery store) added to this challenge. I bought the ingredients for a yummy appetizer that involved mushrooms, goat cheese and thyme, but somehow my mushrooms went bad. This left me with a dilemma and after some chatting with family I came up with this appetizer.

I made up a simple biscuit recipe (we didn't have any yeast on the island). I cut out circles and filled them with goat cheese and thyme. I also experimented with goat cheese and some cranberry sauce that we had made with freshly picked cranberries.





They come out looking pretty and tasting like goat cheese, so we had mixed reviews. In the future I would experiment with different cheeses (we don't really appreciate the goaty after taste). I would also put more of the filling in and make the rolls smaller. Altogether it was a fairly simple recipe and one that I will probably use again.
